During our trip through China, we discovered not only exceptional teas, but also surprising ways in which tea is used. One of our most enjoyable discoveries this time? Matcha ice cream!
And not just one variety. We found matcha ice cream in no fewer than six different strengths, from 1° to 6°. The higher the number, the more intense the matcha flavour.
Matcha as a base for ice cream
Matcha is a Japanese green tea in powdered form. To produce it, the tea plants are shaded for a certain period before harvesting. After harvesting and processing, tencha is produced, whose leaves are finely ground into matcha.
Because the matcha powder is incorporated directly into the ice cream, its characteristic flavour remains clearly recognisable. The combination of the creamy, sweet ice cream with matcha's vegetal and slightly bitter character works surprisingly well.
Six different strengths
What we found particularly special was that you could choose how intense you wanted the matcha flavour to be.
There were six levels, from 1° to 6°. With each step, the flavour of the matcha became clearer and more pronounced. A fun concept, especially for those who regularly drink matcha and appreciate its distinctive flavour.
We chose number 4
We tried the 4° variety. For us, it was nicely balanced: a clear and pure matcha flavour without becoming overly bitter, and without the ice cream tasting too sweet.
It was a simple discovery, but exactly the kind of experience that makes our travels through Asia so interesting. Tea is not only found in a cup there, but also appears in all kinds of dishes, desserts and everyday habits.
